I tried this one straight from the Family Meal Planner this week, half-expecting “fine”… and it unexpectedly slapped. Smoky seasoned chicken, charred peppers, garlicky cauliflower rice, and all the cozy fajita toppings — without the fuss. It’s become a new staple already. 🤍
Ingredients
- ✦ 1 lb chicken breast, sliced into strips
- ✦ 1 large red bell pepper, sliced
- ✦ 1 large green bell pepper, sliced
- ✦ 1 large yellow onion, sliced
- ✦ 4 cups cauliflower rice
- ✦ 1 large avocado, sliced
- ✦ 2 tbsp lime juice
- ✦ 3 cloves garlic, minced
- ✦ ¾ cup shredded cheddar cheese
- ✦ ½ cup sour cream
- ✦ 3 tbsp olive oil
- ✦ 2 tsp chili powder
- ✦ 1 tsp cumin
- ✦ 1 tsp paprika
- ✦ ½ tsp garlic powder
- ✦ ½ tsp onion powder
- ✦ ½ tsp salt
- ✦ ¼ tsp black pepper
Instructions
- 1 In a small bowl, combine the chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper to make the fajita seasoning.
- 2 Season the chicken strips with half of the fajita seasoning and toss to coat evenly.
- 3 Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the chicken and cook 6–8 minutes until golden and cooked through. Remove and set aside.
- 4 In the same skillet, add the remaining 1 tablespoon olive oil. Add the peppers and onion with the remaining seasoning. Sauté 5–7 minutes until tender and slightly charred.
- 5 While the veggies cook, heat a separate pan over medium heat. Add the cauliflower rice and minced garlic; sauté 4–5 minutes until tender. Season with salt to taste.
- 6 Divide the cauliflower rice among 3 bowls. Top each with chicken and the sautéed peppers and onions.
- 7 Drizzle lime juice over each bowl and top with avocado, shredded cheese, and a dollop of sour cream.
- 8 Serve immediately while warm. 🍽️
💡 A few little tips
For extra flavor, char the vegetables at high heat for a smoky taste. Add jalapeños for heat, or top with fresh cilantro and pico de gallo. Store-bought riced cauliflower saves time — or make your own by pulsing cauliflower florets in a food processor.
